Lunch for the week!  Make ahead and enjoy lunch with minimal fuss the rest of the week.  This recipe is adapted from a Weight Watchers recipe: brown rice and veggie bowl with ginger lime dressing.  Hearty, plant-heavy, and absolutely delicious.
